Prescinseûa P.A.T.
The prescinsêua (in Italian also called quagliata, or curdled, Genoese or Ligurian) is a typical dairy product of the province of Genoa. The prescinsêua has a consistency halfway between yogurt and ricotta, has a sour taste and is used for the preparation of pansoti, Easter cake and almost all the typical Ligurian savory pies and barbagiuai (fried pumpkin ravioli).
