Storico Ribelle P.A.T.

Medium or long matured fat cheese, semi-hard or hard paste, depending on the seasoning. Historic rebel is one of the oldest Alpine cheeses that preserves the technology, the aging methods and the organoleptic characteristics of the past. Produced in the "calècc", ancient stone sites, where the cheesemaker heats the milk and cooks the curd on a wood fire, it is a particularly long-lived product. It can mature for more than 10 years without losing its excellent organoleptic characteristics.
