Medium or long-aged semi-fat or fat cheese, semi-hard or hard paste. During the Great War it was discovered that by hiding the cheese in the marc a different product came out from all the others. Since then, this refinement has continued to give excellent results, so much so that it has become a traditional Venetian production.
