Lean, short-matured, soft cheese.
Ancient cheese, from when it matured covered with Possagno clays or under manure. Today it matures in the alpine pastures of Monte Grappa, where it is also sold directly. It is one of the few low-fat soft cheeses with intense aromaticity.
