Formaggio in Fossa di Sogliano D.O.P.

Medium-aged fat cheese with semi-hard texture. Historical cheese from the Apennines of Emilia Romagna and the Marches, where the Malatesta family hid products, subject to raids, in pits dug out of the rock. It is made with cow, sheep or mixed milk. Before it is buried, it is placed in a canvas bag. The aging in pits gives the cheese a high aromatic intensity.
