Abbucciato Aretino P.A.T.
Semi-hard paste, fresh or short matured cheese. It can also be eaten fresh, but the difference makes it after a short seasoning, when the crust is formed, hence the name Abbucciato. It was already mentioned in the 11th century by Camaldolese monks.
