Pecorino della Montagna Pistoiese P.A.T.

Semi-hard, short-matured fat cheese. In the Pistolese mountains, sheep are raised mainly in the wild, allowing them to feed on wild herbs. Raw milk is processed with very old techniques, handed down to today. That give life to this cheese, available only locally. So much so that it is a Slow Food Presidium.
