Ricotta Romana D.O.P.
Low fat product, fresh, with a soft and creamy structure. Typical Lazio production, it comes from the whey of sheep's milk of various breeds. From the hot-acid coagulation of the whey a product is extracted which is stored in refrigerated cells and immediately marketed. Fresh dairy product with a truncated cone shape, characterized by a low intensity pecorino lactic aroma.
