Canestrato di Moliterno I.G.P.
Produced in Basilicata, in the municipalities in the province of Potenza and Matera, from mixed sheep and goat milk. It is a symbol of transhumance, being made along the ancient routes of the flocks. Maturing takes place in Moliterno warehouses. It is treated with olive oil or wine vinegar, or with soot water. Both the Primitivo type and the Matured one have medium or medium-high intensity aromas.
